Also, I am working on Ken Forkish's 80% biga white bread right now, and I am confused- should I cover the bowl for the rest of the bulk fermentation? It only says specifically to cover the biga, which I already did.
My most recent loaf, it was ok but pretty plain, no "complex flavors" really. Nice texture

Yesterday's pizza making was a bitch, it kept sticking so burnt cheese smoked out my house, lmao. The pizza's were disappointing compared to the usual. And yeah, pretty much ate it all, since I do it for the senpai. Might start a sourdough dough tonight and bake it for the 4th party on Monday.
