What does /ck/ think of ZUKES, aka "courgettes"? I notice a lot of people seem to dislike them because they are watery and have a weak taste on their own, but are there ways to correct this?
I like zucchini it has a nice flavor and I haven't really found them to be too watery.

just cut them in rings and fry them. No need to batter even. Add freshly squeezed garlic. Or also tomato slice and good mayo, eat hot or cold, both good. Small ones definitely have more water in them. Well water means stew so you could just dice and stew it with cabbage and potatoes, add fried vegetables like tomato, carrot, onions, bell peppers as the taste base. Even fried, it's light-hearted summer seasonal food.

remove the water via frying or roasting
I only use the zucchini in a finely diced caponata / ratatouille type vegetable stews.

I use zucchini a lot, and enjoy it.
Never do steaks without mushroom,onion, and sliced zucchini fried in the drippings, great combo.
I've thrown it in stir fry too, but where I tend to use it a lot is in sauces, i grate it very finely and find that it really cooks into nothing and just adds flavor.

make sure you pick them when they're small tho
Fry them, layer them in a 'pasta', make bread with them, sautee them with soy sauce, grill them, remove the seeds, stuff them, and bake them... Can't go wrong. 10/10 would eat. 11/10 would choose over eggplant any day.

I eat zucchini a lot and this is the first time I've heard of anyone saying zucchini is watery. Maybe it's because I usually fry them, but I've never noticed it.
As someone who makes zucchini bread regularly in the summer, I can assure you that it is watery. Grate some sometime and you will have puddles all over your countertop.
