I've been frying up plantains every single night this week. They're so good, and they're cheap and easy to make.
Besides tostones, whats other stuff I can make with plantains?

>Arañitas - grated green plantain shaped into balls and fried till very crispy

>Mariquita - mature plantain thinly cut lengthwise and fried, very much like a long plantain chip
>Tostones (stuffed) - before frying the green plantain the second time, use a pestle or anything else to make the tostón concave, so that it can hold a filling. Ceviche, shredded chicken, put whatever you like in there.

None of those are green.
The greenish one on the left is already maturing, so it's no good for Mofongo and such.
