Not sure this is what you mean, but there are potato dough varieties of pizza eaten in Italy. They're generally made at home rather than purchased out, basically the opposite of 'regular' pizza. Unlike regular pizza dough, most potato dough ones have milk in it instead of water. Most potato dough pizza are made in a frying pan rather than the oven, but some are baked.

I'm sure if you look up 'pizza,' 'impasto' and 'patate' as YT search terms, you'll find many recipes.

Because """"""""Italians"""""""" have no idea what we eat in Italy. All they know is whatever frozen ready meal the supermarkets abroad label in the tricolour.

There are as many variants of pizza in Italy as there are dialects of Italian (like Romagnolo and Marchigiano) and regional minorty languages (like Sardo and Griko). Basically, what would be unheard of in one area is common in another.
As for potato, potato dough is pretty common throughout the country, but is typically only prepared at home so foreign tourists wouldn't ever really get a chance to try it. Potato as a topping is a Roman thing but has spread throughout Italy and has become a pretty common take away option.

And barbecue chicken pizza was the big pizza meme in Italy 5-10 years ago. tldr; there is no unorthodox pizza, just uncommon regional types.
