I work at a pizza place as a second job atm. We usually take the dough out of the walk-in and leave it out for a little bit so that it can proof. It allows the dough to stretch easier and allows air pockets in the dough to rise, thus, making the end product's crust crispier and the inside fluffier. Whatever bacteria it may collect (if any while it is in the dough tray) will be killed in the oven. I'm sure that their counter is kept clean as any kitchen should be. Genuinely confused as to why this may be considered an issue. I would assume it's by customers who think they know how to do someone else's job but maybe I'm wrong. Someone please explain.
