I've never had one personally but I know there are a lot of chicken dishes that have olives in them, sometimes including a sweet dried fruit like raisins to balance it out, it sounds pretty good. I usually just add them to salad. You can serve them along with cheese and nuts, fruits, etc. on a cheese platter.

Toss olives and garlic into a basic vinaigrette and let the salad wilt for an hour or so

tapenade was the first thing that came to mind but you can use olives in a lot of dishes. Pasta/potato salad. Marinara sauce/pasta. Pizza. Salad. Sometimes I'll get Ritz crackers, put a slice of pepperjack or provolone and top with a couple slices of olives and finely diced sweet onions.
