Does marinating shrimp and/or scallops overnight ruin them in any way?
Just talking an oil and herb marinade

You only need to marinade them for a few minutes. Putting them into vinegar too long will probably turn them into ceviche.

This. You might do better with a lightly salted herb brine (depending on the herb, rosemary would be a good choice). Or a cream/milk herb soak (this trick is great for skate/ray fins which are very similar to scallop).

Missed shrimp in OP, this advice for scallops. Shrimp are a different beast. Dry spices overnight on shrimp in shells is good for me. Not sure oil brings much to the party.

Oil and herbs is fine won't hurt shit. Lemon juice or vinegar will "cook" it. Scallops are also fine marinating in oil won't hurt a damn thing.
