it's a technique where you put things (usually meat) in a water bath kept at a specific temperature. The idea being as the system approaches equilibrium your food will be that temp exactly

with a gas range and some good thermometers you don't even have to buy anything. Your autism should be enough to keep the temp stable

It's pretty cool because the sou vide thing is only like 100 bucks and you can make fuarking tasty shit with it and some plastic bags. If you were a poorfag you could cook gourmet shit without even owning an over or stove or pans or silverware or all of that shit.

Pretty much this. its only really useful if you're in a busy restaurant and want constant perfect steaks or something. It can be useful for other things but its more a specialist piece of equipment for a commercial kitchen.

I had used an electric oven firstly. It can keep temperature pretty even and give 60C+, so I cooked e.g. onsen eggs.
I had bought waterbath and vacuum sealer then, but use them like once per year)
