Is there a practical difference between vanilla extract and artificial vanilla extract? The artificial stuff costs half of what the natural stuff does. In my area.

Real vanilla contains all the aromatic compounds in the vanilla bean. Real vanilla has a more complex fragrance due to those other compounds. Artificial vanilla consists only of vanillin, the principal aromatic compound. Artificial vanilla can be had in clear formulas that won't dull the whiteness of meringues, ice creams and such.

If your baking with it you likely won't be able to tell a difference. But in stuff like custards or ice cream the pure extract is noticeably better. My favorite thing to use is actually vanilla paste, it has vanilla seeds in it. It's great and not too expensive.
