Have you ever had "belt noodles"?
I found some ambiguously Japanese/Chinese hole-in-the-wall place near me that sells soups containing them. Big signs advertising "hand-pulled noodles."
They're kind of neat but also difficult to eat and I'm not sure I understand the appeal.

Just looks like a fat tagliatelle. Why was it hard to eat? What was the texture? Were the really handpulled because those are usually round?
I had some the other day with a delicious beef broth but they were only about half that wide. I like eating thicker noodles by impaling the noodle with one chop stick, catching it on the other one, then circling them around so it wraps around like spaghetti does around a fork.

Looks like the noodles my grandma used to make for chicken and dumplings(but thick noodles instead of dumplings)
You make the noodle dough a little extra flour-y. Roll flat 1/8 inch thick. Let dry. Roll noodle sheet up over itself tight. Cut 1/2 to 1 inch wide. Throw into chicken stock for last 20-30 minutes. Wa la.
