Is sushi grade is a hoax?. Doesn't all fish need to be flash frozen to be sold? If it's flash frozen, it kills all the parasites... so I should be able to eat salmon bought in the store, shouldn't I?

You can literally just eat them. They aren't the tastiest thing in the world, but if you find some worms in your fish they won't hurt you.
Flash frozen fish tastes like shit raw. completely changes the texture and taste.

As has been said, it's more of a flavor issue than a safety issue. Sort of like how you can eat a cheap cut of beef from Walmart raw and nothing bad would likely happen, but it probably wouldn't be that good.
It depends on where you are, and where the fish were caught. A lot of saltwater fish are sold fresh, as they're almost always served cooked and most saltwater fish parasites can't survive in a human (there are exceptions). Freshwater and andromonous fish are another matter entirely, and need to be frozen solid for a time or thoroughly cooked.
