Parboil the slices in salted water, but just slightly salted, don't over do it because they absorb salt easily. Then dry them out on a rack for an hour or two and get your oil hot in your pan. Place the parboiled slices in the pan and cook until crispy. Remove and cover with whatever spices/flavoring you want. Let cool down and then keep covered once cool. If you cover them hot, the steam will make them soggy again. Best to lay out on a tray in a single layer to cool off/dry out

Just in case you're being serious, don't do that. Olive oil can be okay for higher heat cooking if it's a lighter olive oil, don't use extra virgin for that. Adding red pepper to the oil is going to make tear gas.
