Because it can be irretrievably fucked up in a few different ways which, while easy to avoid if you know what you're doing, aren't things everyone knows. Not tempering your eggs well enough, overcooking the custard, too hot in the oven or not a good enough water bath, or too long in the oven, will scramble your custard, at which point you're fucked.
Don't disagree that they're easy to make but generally that's the thing that makes people consider a dish challenging- there are places where mistakes can wreck the dish and there's no coming back from them.
