I had some leftover food from the Middle Eastern place. I spread the baba ghanoush on some pizza crust, then added the chicken, and put it in the oven.
I feel like it was a tad dry though. What else would you add to this?

Yeah that looks really dry. I would've added more spread, some crunchy vegetables, roll it up like a burrito instead, microwave.

how much was the jizya tax?
i would have still made tomato sauce.. but maybe instead of basil and oregano i would have used cumin and garlic?

Mmm, a nice start. Yummy roasty eggplant and chicken. I'd have rubbed that pizza crust with some fragrant EVOO, sprinkled it with some za'atar spice and then baked it. Could have used some fresh yogurt drizzle,some lebnah, when it came out of the oven to freshen it up. A little taboulleh with all that fresh parsley could have helped, maybe a tahini. See if you can get any of those things as a "side" next time you do the leftovers from that joint. Just a small cup of any of that will kick it up.
I live in a wasteland for that kind of good food. I used to be able to pick up some za'atar bread at the local Giant or Shoppers Food Warehouse right on the bread aisle, when I lived in northern VA. I used to add pizza toppings to that, or use it as an appetizer for when I was grilling outside, warming that up on the grill, then slicing that up for everyone, while the main cooked. It was de facto required for shish-ka-bob nights. I might be able to get some Stonefree flatbread and doctor it up myself where I live now, but baba ghanouj? Gotta make it myself, *sniff* Only hummus I can get is Sabra.
