i tried it a few times and it worked but i thought the result wasnt worth the work for it
did i do something wrong? they were chocolate souffles

Best souffle I've ever made was a sweet plantain souffle with a rum brown sugar sauce with a pinch of allspice. Divine. I don't really think you need an exacting souffle recipe. It's just the technique of pureeing something like blackened ripe plantains with a little lime zest and some kind of fat (yolks or butter, if not making something with cheese), and you fold in those flavors to the egg whites. Just serve right away!
Make sure your ramekins are squeaky clean, like not hand washed. Or you prep them with sugar or flour so the rising souffle can climb the sides. Either/or.
