What's your favorite & least favorite cut of steak?
Favorite: New York strip
Least favorite: T-bone
>>9012038
I like shank in beef and lamb. I don't really have a least favorite.
favorite: flat iron
Least: chuck steak
I can't believe you ordered that: filet
The cook better be really skilled: porterhouse
>>9012038
is this fucking bait? a t-bone is just a new york strip with the bone and a small portion of filet still on it
>>9012060
>Two meats that don't cook the same attached together.
Who thought this was a good idea?
>>9012051
>porterhouse
That's the problem with t-bone and porterhouse. They can be amazing, but you gotta know what you're doing.
I like a nice striploin or flat iron. Sirloin is my usual go to though for the right mixture of price while still being a decent steak. Lease favourite is pretty much anything with the work round in it or lower.

Favorite: rib eye
Least favorite: new york strip
>>9012038
>favorite is strip
>least favorite is t bone
>which is literally the strip plus a piece of tenderloin
>>9012131
Why the fuck has fucking flat iron been memed into fuckign existence.....it's tough/chewy as fuck
>>9013540
Wut? It's tender as all fuck and has great marbling. That's why it suddenly got popular. It also marinades really well.
It is a denser cut, so you can't cook it the same way you cook a loin cut, but it's not that delicate.
As to why it became overhyped, that happens to pretty much everything good. People like something, they talk it up, it becomes a thing, etc. Can you think of anything good that is appropriately hyped?
Top Sirloin.
It sounds good.
It's supposed to be good.
But it's actually nothing special.
Favourite:
Center cut sirloin, because I'm a pussy who doesn't like grizzle and fat.
Least:
Pretty much any of the chunk or round cuts.

more for less, season it and cook it medium rare and it's pretty damn delicious. Plus you can do more with it than you would more prime cuts without feeling guilty about ruining a good piece of meat.
>>9012065
Eh? They do though.
Favorite: Ribeye
Least: Sirloin
>>9013952
Na bro. Gotta read more Kenji or cook more Prime steaks. You might not have an issue with choice steaks since the marbling is probably closer between the two cuts.

Ribeye is best
Haven't had a bad cut yet
