Are you talking about the noodles themselves, or the dish in your pic related? If it's the actual noodles, there isn't really one. Pulling noodles is hard, and getting the right hydration takes a lot of trial and error and a lot of fine adjustments. the noodles themselves. I'd looked at silk road chef but they no measurements so I went thru tajik hell and translated what I could find. So far I've guessed that 500 grams flour, 2 or 3 eggs, and 200 milliliters of water with a pinch of salt seems to be the base recipe but like you said, it'll probably be some work to get it right.
