The restaurant needs to set a closing time 45 minutes to 2 hours before it intends to send wait and cook staff home for the night.

If someone walks in a minute before closing time they should get seated and a full meal and it shouldn't surprise anyone.

If, on the other hand, the restaurant doesn't want to follow this sane (and industry wide practice) then it should start turning customers away an hour and a half before closing time.

If you don't want people to come in at 7:59 you shouldn't be open at 7:59. The purpose of publishing your hours is so that customers know when you'll serve them, if customers have to guess what they /really/ mean then you might as well say "we close at 8ish". If you need 30 minutes to clean up and close the kitchen, you should close at 7:30. If you want it to be clear that you'll kick everyone out at 8pm, but won't accept orders after 7:30pm, then write "doors close at 8pm, no new customers after 7:30pm".

It's your job to communicate clearly, not the customer's job to magically intuit what your schedule is.

My bosses/owners/chefs are super autistic about cleaning and it takes 2,5h each goddamn evening to clean, dry and disinfect the whole kitchen basically.
Kitchen is till 22 and I almost never leave until midnight. I only work evenings, so there is that, at least.

I get a fixed amount each month (min wage), with extra for holidays. Most of the weeks Im just shy of 40h, so he never makes a big deal about if we finish at 2330 or 0030
Not a cook, dishwasher/helper. I could also mention the nonexistent law-mandated half hour lunch break, but taking it instead of shovelling down in 10 mins would mean staying longer at work, fuck that. Get in, do work, get out.

In the fine dining scene this is just a terrible thing. Our restaurant is built inside a luxury casino, but that doesn't mean all of the customers and clients are high end.

The customers that usually come in last minute are the ones who just won 100 bucks on the gaming floor and ask their wife if they want to go eat at the fancy steakhouse last minute. they usually just sit there and stare at the menu with sticker shock, spend 10 minutes picking a fucking wine to pair with 45 dollars for 6oz of lamb chop appetizer, order a soup, salad, entree and dessert. All in all this puts the team back an hour to an hour and a half.

We get written up for having any overtime btw, but usually the managers are all gone before any of this shit happens so they don't see it and still ask us why we're running overtime.
