I'd probably go Roja, but that is because I feel you could sneak most of the ingredients of Pico in to your food (when needed) and just not say you were adding Pico.

I'll never understand why salsa fresca is considered salsa when it's more of a traditional topping than a sauce. The only time it's even semi-liquid is when it's from a bottle.

The meaning is lost in translation, the closest thing to the word salsa in the english language is sauce but they are very different things. Salsa can be 100% liquid or like OP's pic with every possible consistency in-between. The most important thing is that if it is made with chile (any kind) it is a salsa.

most mexicans I know(I know/am related to/work with a lot) don't make overly spicy food, they aren't indians. I like spice though, even if verde is my favorite out of the three provided.
