. just look for ones that have been forged. most knives sold at super markets are made of stamped steel. when it forged is much harder and compress better. lasts better and keeps edge. german knives are good. jap knives are cool too. I just get a solid french knife imo

Don't buy sets, they are all either shit or wayyy too expensive. The only knife that is worth spending real money on is a good chef's knife. I'd recommend a Wüsthof Classic 9'' (there are now versions with bolster (the old one) and without (what used to be called the Cordon Bleu series). if you want to give yourself a treat get a Wüsthof IKON 9''. The only other knives you need are a Victorinox parer for $3, and maybe a Victorinox bread knife. The affordable Wüsthof SilverPoint series are also pretty good.. Spend the rest of the money you save by not getting a set on a good endgrain cutting board. Always get the largest one you can fit on your counter and afford.

nigger that advice was good maybe 30 or 40 years ago. Nowadays pretty much EVERY mass produced knife is basically stamped. The bolster is made by induction heating a section of the stamped steel and squishing it together, then forming it with a power hammer and dies. Nothing else is "forged". Watch the video from a about 0:40 onwards.

Literally just buy actual Japanese knives. Victorinox has some cheap ones around $30-$60.

All you need is a Gyuto/Santoku (literally try one of each and see which one you like. Gyuto is better for slicing and Santoku is better for hacking but they both do the job amazingly well) and a parer. That's it.

Where did I say Victorinox was Japanese? They make Japanese style knives that are the best entry-level ones you can get. If you want to go up $50-60 in price up to $110-120 you can get Masahiro for example.
