Need advice from someone who knows their way around ground game meat.

I plan to make elk burgers in a few days since I have some frozen ground elk at home. Since game is very lean meat, recipes I've read say to mix in a little bit of ground pork for some extra fattiness, or the burgers will be dry and not very good.
I do not have ground pork at home, though it's not a big problem to just buy some. What I do have though, is bacon fat I've saved, and some frozen pork fat shaved off from the rind. Could I mix in any of those in the meat instead, and have a similar result? Has anyone tried?

I think the bacon fat would work fine
>>
Alternatively you could maybe mince the frozen fat up and mix it in and I think that would work well too

Do you reckon I need a lot of it? I will of course fry some samples before shaping the burgers, but I predict that if I have too much, it will all leak out from the burgers when being cooked.

Don't think I've ever seen that in supermarkets here, but then again I'm Swedish. Isn't it expensive though?
>>
just add fat enough to make the fat percent around 15 to 20 percent of the mass

Should be easy enough to calculate if you know how high in fat the meat is. Would you know this?

according to this website its 9%

That's a bit high compared to what I found
http://www.100gram.se/livsmedelsverkets-livsmedelsdatabas/algfars/50653
(Fett 1,6 g)

But this is a Swedish site of course, and my meat is Swedish, so it looks like I'll need to use quite a bit of the bacon fat.

I also have to wonder what your elks eat if they're that high in fat.

Finish with beef fat or butter it needs salt alot of salt but not to the point where its too salty cook to rare or medium dont add any other meat you can mix in some butter or some fat either from the elk it self or beef pork tends to make it taste kinda funky.

I saw a program where a chef made french fries with duck fat.
Its basically same price range as olive oil.

My entire life iv grown up on deer meat because my father really enjoyed hunting. Just mix the meat with egg yolks and its perfectly fine. I still get deer meat from my dad and use it for everything from spaghetti to tacos to marinading it and frying it.

use the pork fat, just grind it with the meat

I mixed some chopped bacon in with the last elk burger I made. Turned out delicious.

For some reason, elk burger cooks fast, so keep that in mind.

me and my family smoke our own deer meat and we usually put 50% pork and 50% deer and it comes out pretty nice. We ground it together twice through a meat grinder. we mostly make sausage and ground meat for dishes with it.

Yeah, that's what I do with most of it except for the loins and backstraps. I also keep some for stews and braises where I cook it moist after searing and shred for tacos or burritos. But a lot gets ground and mixed with 50% pork shoulder for sausages. Any sausage can be improved with 50% game.
