>breaded, fried pork cutlet

Not sure how you could even go wrong with that. If you have to ask, maybe you shouldn't bother.

I have never made it, but here is the recipe from the Columbia Restaurant cookbook (their food is fantastic). It is a Spanish Cuban restaurant in Ybor CIty Tampa.

2 6oz Filets
1 egg, slightly beaten
2 cups bread crumbs
Garlic powder, salt, and pepper to taste
1/4 cup oil
2 cups Catalana sauce
1 hard-boiled egg, chopped
Chopped parsley

Season steak with salt, pepper, and garlic.
Dip in the beaten egg and then in the breadcrumbs.
Fan-fry in oil and transfer to an ovenproof plate.
Spread Catalana sauce on top of stake.
Bake at 400 degrees for 5 minues.
Garnish with chopped egg and parsley.

Catalana Sauce:
1x 28oz can tomato sauce
1x 28oz can crushed tomatos
4 onions, chopped
4 green peppers cut in strips
2 bay leaves
4 garlic cloves minced
1/2 cup EVOO
1 tsp sugar
1 tsp aprika
salt and pepper to taste
1 qt water

Saute onions and gree peppers in olive oil.
Add garlic, tomatoes, and tomato sauce.
Add bay leave, paprika, sugar, and water.
Cook over medium heat for 1 hr.
Season with salt and pepper.

What I find odd about the recipe is that is called "Meat from Milan", but it is topped with "Sauce from Catalonia".

To get from Catalonia to Milan, all you have to do is cross all of southern France.

Fried.
>>
Crack an egg. Whisk it.
Dip pork meat in it.
Cover it with flour and breadcrumbs.
Add salt and pepper.
Fry it with butter.
Serve with parlsey potatoes and a slice of lemon. Alternatively, serve it with SpƤtzle.
