Is anyone well versed in West African cuisine?
I'm trying to surprise my boyfriend with Groundnut Stew but mine is always kinda bland compared to the type I've tried overseas.

What like Ivory Coast? Don't quote me on this I'm I'm pretty sure it's a lot of fish. Branzino, sea bass. etc.
Starch and vegetables I have no idea, but I assume it's plantains, yams and whatever veggies are available.
Africans can't eat you silly goose. there is no food in Africa

Take some ideas from here to add some flavor.
I've tried both traditional and this version and I prefer this one if you aren't constrained on staying traditional.

Why not East African? Ethiopian cuisine seems decent and nicely spiced. I haven't tried this yet but I've been meaning to make it: http://allrecipes.com/recipe/246340/doro-wat-ethiopian-chicken-dish/

to me, what builds the flavour is the soup stock
and what makes west african food soup stock uniqe is usualy a ixed surf and turf kinda stock
go to an asian mart, look for dried shrimp or shrimp powder, or craf fish magi stock cubes....boil some beef and add in the fish product...this will boost your flavour
curry powder, used judiciously as a seasoning, is also a good tip
some spices traditional arent easy to get but this mix will help http://www.food.com/recipe/nigerian-peppersoup-seasoning-substitute-311240
