I feel like we romanticize Japanese food in America so we become huge sticklers about the presentation, which can make a lot of dishes harder than they need to be.

Oh trust me, I'm the same way, but I feel like it's part of the reason that Japanese food gets taught the way it does.
IMO one should focus on making the ingredients and making sure it all works together first and then focus on presentation later.
