Always wanted to try horse. Guess it depends on the animal. You know the difference that people say between grass-fed and corn-fed beef? That's just diet, which effects the marbling as well as taste.
Then again, I've never tried horse. But I do know the difference between farm rabbit and the shit I've shot in my backyard, and just felt like chiming in.

Horse isn't popular in the United States. I've never had it, or had an opportunity to. I've heard that it's not the greatest. Has anyone had it, and can describe it?

that's a relevant concern for general consumption, but that wasn't an issue in Cure's case. The head chef at the restaurant partnered with another chef and a farm that raises horses for meat in a safe, sustainable way. Knowing how the meat was sourced cemented the fact that people who were "outraged" are fucking morons.
