I like making lentil soup and lentil salad. Im actually making lentil soup with homemade corn tortillas for dinner tonight.

I like making a vaguely Indian-ish lentil sauce in coconut milk

caramelize onions over low heat
increase heat
add tomato paste
add spices (I use turmeric, cayenne, paprika, smoked paprika, onion powder, garlic powder, mustard, cinnamon, cardamom, clove and at times cumin)
wait until the spices brown
pour in pre-boiled lentils
pour in coconut milk
boil until it kinda mixes and reduces to desired consistency
add salt, pepper, lime juice and cilantro

I make lentil wraps with tortillas because I'm a lazy fuck and I don't want to make better bread.

Lentil soup used to be the only thing I did with lentils.
