What are some unique sushi ingredients that are sort of outside the box but still tasty?

A place I used to visit served a roll with Asian pear instead of cucumber for extra crunch. It was pretty awesome.
i'm not getting any bonus points but a sushi place here does a steak/pecan/cream cheese/green onion roll.
it wasn't bad. also, this is obviously a place in texas.

Sushi Express in Taiwan added a pate de foie gras sushi to their line. It's a sheet of nori with a little oil on it, a lump of rice, a wad of pate, and a small blob of some sort of fish-egg mixture on top.
Their initial version was better IMHO. Instead of the fish eggs, they put a caper and a few bits of red onion.
