What are some good potato based dishes aside from the obvious mashed/baked?
I'm talking "main part of the meal" dishes. I was eating scalloped potatoes a lot mixed in with eggs but got sick of them, but I'm a poor fuckface and need to go back to eating them more
Boulangere, Dauphinoise, Gratin and Lemon & Herb.
With an egg and some flour you can make gnocchi. Filling, too, just toss em in a light brown butter sauce and you're good to go.

cold leftover mashed potatoes can be turned into breaded and pan-fried croquettes. Or stuffed with your spiced up meat like papa relleno, or other fritters. Potato pancakes are god tier with a side of sour cream

QUarter some large potatoes lengthwise, coat with olive oil, season with salt and pepper, Bake on tray in oven for 45 minutes at 180-200°C- Add quartered onions, quartered fennel bulbs, halved zucchinis and whole carrots (all optional) after 20 minutes and bake until the potatoes are golden brown. Eat with cottage cheese/creamed milk curds with herbs.
Cut in slices, fry with onions and bacon. Eat with fried egg and pickles.

Season (I like smoked pararika, salt and onion powder) and use a high temp oil
