my favorite sauce with boiled chicken:
90% sugar with some lime juice to melt it, add minced ginger, some chopped chillies and a bit of fish sauce or salt.
it's basically a spicy sweet and sour sauce. pretty great for dipping

Sounds good but personally I treat ginger like a bay leaf in dishes like that. Throw it in as slices and then remove it. Enhances the flavor without all the knife work.

the beef slices are thin and cooks in the soup like pho. I brown it sometimes but it basically turns out the same, unless I really over cook it to 'brown' it.
