I don't know much about bonsai but grafting cacti is done to speed up a slow growing species so that instead of waiting 4-5 years for the plant to grow large enough to flower, it could take 1-2 years if grafted.
You basically cut them both and put the cut ends together and in a week they'll fuse together.

I like the red dragon fruit because when you're done, you and the kitchen sink look like you've butchered your housemate and put the pieces down the garbage disposal.

Dragon Fruit have a nice texture but the flavour is a little bland desu.
