I want to bake really thin cookies, then sandwich two hot cookies around a cold cookie dough center. Has anyone done this before?

It's estimated that no more than 1/10,000 eggs is infected with salmonella. Now even if you use an infected egg, that doesn't mean you'll get salmonella from eating it raw, the chances of that are even lower.
In fact, they pretty much admitted that not serving raw eggs is more of a guideline for commercial operations rather than home cooks.

Whoa, there cowboy, we're not talking about an unenforceable wish by Michelle Obama about school lunches. No restaurant can serve raw egg in the Land of Corporate Freedom without risking bankruptcy from lawsuits out the ass when someone gets a tummy ache after eating there. Another hazard with flour is grain weevils. They get everywhere, reproduce very efficiently via traumatic insemination, and can bore through paper, plastic, and drywall. Three days in a freezer is supposedly enough to kill their eggs. I keep all my grains and nuts refrigerated indefinitely. They can't move at refrigerator temperatures.
