Does anyone know any good sausage recipes? I'm going to be grinding up some pork tomorrow and I was looking for some spices to use.

For bratwurst I use: ground nutmeg, ground ginger, garlic and onion powder, carraway seeds, sugar, mustard powder, thyme leaves and salt.
Also curing salt helps if you've got it

tried Raymond Blanc's recipe once. Certainly not bad, quite mild and meaty. I'll add a bit more spice next time.

Try this - it's the wurst Italian sausage you'll eat:

I recommend frying small pucks as you go to taste. Also, orange zest can be a nice addition.
