What quick small meals can I make with boiled eggs? I typically

Scotch eggs, basically boiled eggs surrounded by sausage meat and breadcrumbs. Can bake them or fry them.

My husband likes to take 2 boiled eggs, put them in a cup (with salt, pepper, and ketchup) and then "scramble" them by mushing them up with a spoon. Yum!

I do pretty much the same and use it as bread topping
Thin onion pieces go perfectly into that, also your dressing of choice might be added ( for me this would be vinegar or a little sauce hollandaise )

Where i come from its a common thing to slice the egg in half, take out the yolk and put vinegar and mustard into the cave where the yolk was, then add the yolk back into it
