youll probably want more than a tablespoon of sugar. just add your wet ingredients, then add dry till its slightly less thick than a cake batter. only very slightly. make a small test pancake and see how it forms, if its too flat add in some more flour or extra baking powder. if it tastes like ass add some extra sugar or some cinnamon or honey or some shit. then one more small test one and it should be fine.

These half-sour pickles are supposed to be ready now (5-7 days). I am wondering if I should try one now or save it for with something else later on. What do?

I have never used pickle crisp, but I may give it a try if they don't have enough snap. I also thought it was really strange there isn't any vinegar used.

My corned beef is also done (it has been 10 days since start). I didn't intend to eat them with the half sour pickles, they just finished the same day.

I won't be making it now but will be within the next 24 hours. Not exactly sure what I'll have with it, but plenty of different options. Looking forward to the next morning hash at the very least.

Haven't tried the corned beef or the pickles yet, so catfish first!

Pretty simple, not including all the steps
>dry catfish fillets
>season with [Old Bay]
>dip into milk or milk/egg mix
>[let soak for at least one hour]
>drain filets and then thoroughly coat in corn meal + flour mix (I use Andy's cajun breading)
>let sit for 20 minutes to dry for maximum crisp

No problem.

Get some cajun spices, think like cayenne, garlic, paprika, oregano, or just buy some Tony's.

Get some chicken. Boneless chicken thighs are perfect for this, but you can use breasts or whatever you want to break off of bones.

Get some stock or bouillon.

Coat chicken in seasonings, sear in hot pan. Remove chicken and set aside. Add an onion to the same pan, cook it up. Add chicken stock to deglaze, scrape the hell out of the pan. Add cream and more seasonings to taste. Add chicken back to sauce and simmer.

Cook pasta.

Combine it all and serve.

Consider throwing some green beans on an oven sheet with some onion and pig for a veggie.

Made this peanut chicken. Here is the chicken in its marinade.

1/4 cup lite soy sauce
1/2 cup Thai sweet chili sauce
1/2 cup lime juice
3 tbsp peanut butter (5 was taken out, 2 given to dog)
4 cloves garlic, minced
1 inch ginger, peeled and grated

All right boys it's been 12 days since I started corning some beef. I meant to take it out at 10 but I had some changes of plans, no big deal though.

There's nothing really special at this point.

well shit. "Pink Curing Salt #2" that I've had for a few years didn't seem to work. Either that or I just need to adjust seasonings more. Apparently Pink Curing Salt #1 is what's normally used, didn't have any. Oh well. Better luck next time! Tastes good at least. I can only imagine the color (that I can't see) is from corning for ~12 days.

Whew thanks for the warning. I went and double checked as soon as I read this, thankfully am using Cure#1. I don't know why I thought I had Cure#2, maybe because I was looking at some on Amazon.

Still though, I'm not sure why it's not as pink as it should be. Maybe I added a bit too much ice at the end when it was cooling, thus throwing off the seasoning and salt ratio with the water.
