Did the same. Honestly decent recipe but the level of time that goes into it is kind of a pain. Not a fan of the course texture from leaving your meat in chunks either.
Breadcrumbs were kind of annoying. I still like the idea of ground up chicken thighs but the coating left me unsatisfied.
Maybe try a tempura style chicken nugget OP?

I'm trying a recipe which involved ground chicken, so it's very fine, and most of the seasoning is in the chicken. The breading is just flour and salt and I put a little chipotle in it. The egg and the flour is all the breading is. Chicken balls are chilling in the fridge. I also have some bread rising, weeee.

If by that you mean run through a meatgrinder, it won't have the right texture. You need to run the ground chicken through a food processor to emulsify it into almost a paste. That will get you a similar texture to what you're used to.

When I was squeezing it through my fingers is feels like it couldn't even be more paste-y than it is. And im not really used to any chicken nuggets so I think itll be fine. If it crisps nicely, I'll be pleased.
