All joking aside look for a sharp cheese that melts well. Also mix in with a more mellow cheese like havarti or muenster. I find that cream cheese also works very well as an additive.

It doesn't taste like butter. If you make a grilled ham and cheese with mayo it's fine, but I don't think mayo is a good replacement. It does keep the bread from burning, but it has an eggy taste and texture. Like rancid salty french toast, so the cheese tastes awful combined with it. Do not recommend unless you are adding other things besides cheese.
Also, it has to be shitty white bread and American cheese. Or some exotic melty European equivalent I don't know about like red leicester maybe? Or isn't that drier?
