You need a thick cut for this but it is essentially idiot proof and you don't need to let it rest. Pink insides and a good crust outside every time, no bloody juices or cold "rested" meat.

adding to this, if you're not used to doing a particular cut, an instant read meat thermometer is great, I got one after reading meathead and it does just make everything so much easier, especially cooking for my grandpa who likes it as blue as possible.

imo resting 5 minutes is a meme since I don't have any of these heating lamps to keep it hot so I'd advise waiting but just like 2 minutes tops.
