adding to this, if you're not used to doing a particular cut, an instant read meat thermometer is great, I got one after reading meathead and it does just make everything so much easier, especially cooking for my grandpa who likes it as blue as possible.

mistakes I've been doing and fixed
>pan not hot enough, really need to hear that sizzling when you put it down there

>the brown shit in the bottom of the pan is what tastes good, drop a thick knob of butter and scrape that shit off so that it blends with the butter. At the same time put aromatics (garlic cloves or whatever) and with a spoon pour that shit over and over the steak.
imo resting 5 minutes is a meme since I don't have any of these heating lamps to keep it hot so I'd advise waiting but just like 2 minutes tops.
