Shallots are good for vinaigrettes, lighter sauces, and Asian recipes. I wouldn't use them in guacamole or salsa or French onion soup (as a replacement for onions; they're pretty good alongside them though). I don't use them raw on burgers, and I don't use them instead of onion in most of my soups or stews. They aren't a good replacement for leeks or scallions.
The only people who use shallots as a replacement for onions -- rather than as, you know, shallots -- are people who hate onions. And you're not one of THOSE fags, are you?
