You won't want your oil to be crazy hot for chicken, you'll just over-sear the outside before the middle is cooked.

Almost all the heat travels unidirectionally; side heating in a pan is pretty low. Therefore you can just watch the rate at which the chicken is cooking from the side by the colour change. Turn it over when it gets just over half way. If you've picked your heat correctly, this will correspond to a good colourful sear.

If you're cooking chicken breasts in a pan, either butterfly them or pound them real good. A thicc breast will be dry on the outside by the time the middle is cooked.

Since no one else said,
Try dipping a piece of bread crust in your oil. You want to see that it has a bunch of tiny bubbles spewing around it. You don't want large violent bubbles, and no bubbles is also bad. On my stove, I have to try at less than medium because above that is chaos and smoke and spitting grease everywhere. If you're getting violent splattering turn it way down.
