How do I make hashbrowns like Waffle House? I can shred the potatoes

How do I make hashbrowns like Waffle House? I can shred the potatoes to the right consistency with a cheese grater, I cook them in clarified butter on a griddle, but they always turn out soggy and not as crispy as WH. What am I missing?

Compression. Use a steak weight or a waffle iron to make them exactly how you prepped them. Also, before the butter, do a solid 20 minute water soak...then pat dry with a paper towel.

Squeeze the moisture out of then before putting them down.

Inside a paper towel, wrong them like a sponge.

Alternatively, put them in the microwave for a minute before the griddle.

Or do both.

Well you need to go in around 2:30 3 am and get the tears of the only waitress and the sweet and ass hairs of the only cook on the grill then take it home and throw it away and shred your potatoes and soak in salt water for a few minutes then put some butter favored oil in a pan then put your potatoes in then add seasonings then shape and press it down into the shape you want add more oil then cover for 3 minutes then toss and cover for another 3 minutes then remove the lid and cook to the color you want.
