I really like sushi but I live in a landlocked area so it's really expensive. There is, however, a lake nearby. How good of an idea is it to take up fishing and make my own sushi from scratch? Will I end up giving myself food poisoning?

If you live in a relatively cold area w/clean water. go for it! One way to treat the fish would be to pickle it, but it'd chemically cook it to a degree.
