I really like sushi but I live in a landlocked area so it's really expensive. There is, however, a lake nearby. How good of an idea is it to take up fishing and make my own sushi from scratch? Will I end up giving myself food poisoning?

Freshwater fish is very rarely served raw in sushi or any other preparation. It's nearly always cooked. Thus there would be no appreciable risk of food poisoning. It's saltwater fish that are generally served raw, not freshwater.

I've had rainbow trout sashimi in NZ. Delish.
If you live in a relatively cold area w/clean water. go for it! One way to treat the fish would be to pickle it, but it'd chemically cook it to a degree.
