I do have a cast iron pan but the stovetop in this apartment is flat ceramic and I'm worried about damaging it. It was already scratched up when I moved in but I'm wary of making it worse.

I could dry the steak more - I got it fresh and only let it sit for about 20 minutes. I've read kosher salt can help dry meat but I'm wary of over-salting.
