1. Hire good staff, train them to a michelin 3 star standard, pay them in accorance with their skill set and training, and count on your patrician customers to order fine wines at 400% markup and the $350 tasting menu, or

2. Hire morons, force them to memorize a script on penalty of writeups and/or getting fired, and count on the script to upsell customers on your shitty $11 house cocktails

If you want your waiter and your somm and your bus boy to have both great social skills and an encyclopedic knowledge of the menu options, you can go to an upscale Danny Meyer joint or some place like that. They're expensive, but the staff is autistically trained to make you feel comfortable
