How can I make a vegan soup that's fatty like a bone broth? I'm really having trouble with this. Anything I search with "fat" gives me low fat.
I'm not vegan, by the way. This is research. I detest vegans, but I love their money.

You could try something like this

I've never tried it personally, I'd rather just eat the actual vegetables.
fried eggplant tomato onion etc stew, the broth is pretty hearty. Maybe some more georgian bulgsrian french eggplant dishes
fried forest mushrooms no shampinions bullshit allowed with onion and potatoes based soup, it's a morel season soon!
No pumpkin, they add heartiness too, but also a weird stinkbug taste.
Also, add potato flakes in your watery veg stews

coconut oil is so strong in flavor though, it just makes you feel like everything you cook is SE asian. but yea, it will have to be a plant oil. olive oil is my preferred taste-wise
also, when you say fatty, do you mean literally or viscerally. do you want it to be nutritionally fatty or to taste like a meaty soup

virgin unrefined coconut oil has a very strong coconut smell taste. Refined coconut oil is much more mild.

uhn interesting, if you sauteed the onions and garlic in olive oil in low heat you could infuse the flavor into the oil allowing you to add more oil without making it seem greasy. it's usually how I add more fat in my diet if i'm lacking any. If they were vegetarian butter would be a good choice but being vegan is a little harder. you could try to add some nut oil if it harmonizes well with the soup, but there's an trial error elem to that. Vegans are just a huge pain to deal with.
