>there are people that unironically shallow fry chicken breast without lightly coating it in flour
I just do not get it. The texture of the chicken sucks ass if you just straight fry it. If you coat it in a very thin layer of flour (1 tbsp for half a pound of chicken), it will both get crispy and stay juicy as fuck inside.

I'm talking about frying chicken for a stir fry for example, not southern deep fried chicken you lardburger
>>8718470
whats wrong with the texture of chicken.
I may try this though.

If it's for a stir fry you can go for corn starch instead if you wanna be a real ching chong.

Nothing, assuming you don't overcook it.

I prefer my meats and chickens without flour on them
I still get them crispy and juicy.
