Lately I've gotten the shits every time I've eaten spicy food, which is a shame because I really like spicy food. Is there any way to prevent this or do I have to stop eating spicy food?

And eat tacos o enchiladas once in a month.

Well you haven't said if you are going mexican or curries, or street food, or what...
Probably it's the bomb effect of too many onions, garlic and other horrible at once foods at the same time.
Look at diets that are low fodmap (google it) and see if you aren't stacking the ingredients like that.

Dried red peppers make my pee spicy for some reason but fresh red peppers don't.

When I was 14 I was diagnised with a stomach condition and my doctor said I had to quit smoking, drinking alcohol, and eating spicy food... literally my 3 favourite things in the world.
Needless to say, I still do all 3 of those things regularly 16 years later.
