From what my parents taught me, the head chef is the public icon. The sous chefs don't cook very often, but watch over the line cooks. The head chef is in charge of the entire kitchen, and he tells the sous chefs what to do. Most of the time at famous restaurants, the head chef is famous and has multiple restaurants so he usually isn't at one place for very long.
