Try a pilaf or make orzotto. Usually I just like to saute carrots and onions in butter until softened and the acidity is gone, then I mix in the barley and add water. Perfect side to just about anything and everything I find. It's got a nutty taste and a little bit chewy

Barley and Farro are the only grains that get a decent price where I live. All the other grains, like quinoa and buckwheat, are overpriced as fuck. I can't even get regular wheat here.
