Dad said the only way it's good is to put it in a stew. I found recipes that didn't involve a stew. Is he right?

I plan on braising some rabbit later this week. It's a very lean meat, and any one of the slow cook methods that will keep it from drying out is good for it. There's plenty of other stuff that works too, some taking more skill and/or care than others.
Your dad is probably right, but....
I've had some damn good rabbit prepared in alternative manners too.
