Helped my aunt make five spice meat rolls.
They contain pork, fish, shrimp, carrot, chives and jicama minced and rolled up in dried tofu skin then deep fried. Made the dipping sauce as well. Both are very traditional teochew dishes

Thanks, and you are right. I've been experimenting with the broiler sometimes lately, though not for the time of that one in the pic. It's odd to me though, because 2 years ago, I never had this issue of a lack of browning on the cheese or crisping of the crust. In fact, the absolute opposite, I used to get a lot of heavy browning, almost scorch and was using the same temp and general timing I still am. I suppose my oven's performance may have dwindled. But I don't see exactly why.
I was going to have a Mardi Gras party tonight but too many people canceled this morning.
I would have done a jambalaya or gumbo, but one of the people who said would come and then canceled was allergic to shellfish.

batter:
In a large bowl, whisk together 2 TBs corn starch, 4 egg whites and a pinch of salt until frothy. put in bite-sized chopped up chicken breast and allow to soak for at least 10 minutes
sauce
panda express orange chicken sauce or make your own if you aren't poorfag: 1 TBS soysauce, rice vinegar, brown sugar, half cup oj, 1/2 ts. sesame oil, bit of minced garlic and ginger, ts. cornstarch, pinch of salt. heat sauce until boiling. thicken or thin as desired.
deep frying:
vegetable oil (peanut if not poorfag) about halfway (~2 inches) filled in cast iron or whatever suitable means you have for deep frying. heat to 350, slowly submerge chicken, use a deep fryer basket if you can, let cook for ~3 mins. take out, let drain on paper lined plate. let rest while you do another batch. then put back in for another 30 seconds or so (helps keep that coating together)
toss in sauce and serve over rice

garnish with sesame seeds and finely chopped scallions.
